SausyMama’s Thai Curry

The Sausy Curry is inspired by the traditional Thai curry. Despite its complex flavours, the Everything Thai sauce makes it easy to replicate the curry boasting hints of lemongrass, basil, and red chilli.

Prep

  1. 150 gms of diced chicken (Optional, you can also replace this with tofu)
  2. 80 gms broccoli, blanched
  3. 50 gms button mushrooms, sliced
  4. 80 gms red pepper, chopped
  5. 1-2 tbsp oil of your choice

Cooking

  1. Heat the oil in a pan over medium heat.
  2. When the pan is hot, add the diced chicken/tofu, keep stirring until fully cooked.
  3. Add the vegetables and cover for 2-3 minutes till cooked through
  4. Add 2 tsp SausyMama’s Everything Thai sauce, and stir thoroughly
  5. Add 1 tsp SausyMama’s Mama’s Loaded Chilli Oil, and stir (Optional for spice & colour)
  6. Add 250ml Coconut Milk and allow it to simmer for 3-5 minutes
  7. Adjust salt & pepper to taste
  8. Garnish with some fresh basil
  9. Serve with a bowl of jasmine Rice
